The Pastry Chef directs and coordinates all activities of the pastry kitchen, leads the pastry team, maintains established operational standards, rules, and guiding principles.RESPONSIBILITIES:Supervise bakery operations and the flow of production to maintain efficient bakery production with consistent attention to detail, quality, and presentationOversee use of standard recipes for all bakery and pastry itemsDevelop dessert menus for restaurants, lodges, and special events in conjunction with the executive chefCreate weekly employee schedules according to business needs and budgetAssist in recruiting efforts for new employees and conduct employee evaluationsControl food cost and waste through efficient production and rotation of productAble to work in any station during any meal period, managing work force and flow of serviceAssists Chef with monthly inventories, pricing, cost controls, and issuing of food for productionEnsure financial targets are being met and all accounting SOP's are being followed consistentlyMust have effective communication skills with other employees, management, and guests responding quickly to guest requests in a friendly manner, following up to ensure guest satisfactionMakes recommendations for maintenance, repair and upkeep of the kitchen, its equipment and other areas of the restaurantHands on kitchen organization, label, dating and rotation of food product, cleaning, food preparation, and hot line workIs a integral part of ice cream and bulk shoulder season production for seasonal business levelsOther duties as assignedQUALIFICATIONS:Minimum 4+ years of pastry kitchen experience in a comparable food volume operationHigh school or equivalent educationBroad range of pastry production experience, strong kitchen organization, productivity, and versatilityExperience in supervising employeesAble to stand for long periods of timeMust be able to lift 50+lbs regularlyMust be available and willing to work various hours, holidays, and weekendsMust have Manager ServSafe or similar certification expected by the Health DepartmentDATES OF EMPLOYMENT:Year RoundPAY:DOEDeer Valley Resort is an Equal Opportunity Employer.
